Hi Helen,
What will happen is once the DWP have prepared the case papers, they will send you a copy (called the Secretary of States submission)which is also sent ot the tribunal service and is in effect the evidence the DWP are presenting to the tribunal.
You can read through this and see if you have any evidence such as medical reports etc which rebut what the DWP have said are the reasons for not awarding you DLA.
Yoy can also for example, write a diary for say a week or so, listing your problems as they arise on a daily basis to submit to the tribunal.
Regarding finding a welfare rights adviser, have you tried the Community Legal Services database to find an adviser? Their database is here (put in your postcode and put a tick in the Welfare Benefits box)

Alternatively try your local citizens advice bureau or ring your councils social services department and ask if they have any welfare rights advisers.
Finally, yes you can start a fresh claim rolling even whilst awaiting an appeal. As the appeal can only consider your claim based on how you were when the Decision Maker made the initial decision. If things have now changed you would need a fresh claim. If you are successful at the appeal then you can cancel the 'new' claim.
