Have you tried 'speech to text' software, it's much better than it used to be.

I use it most of the time, and get around 98% accuracy. If you're a PC user it's called 'Dragon Naturally Speaking'. See This link

I am not in the same position as you but am still pursuing an oustanding grievance & unfair dismissal with my ex employer & so completely recognise & understand your need for 'vindication'. Hang on in there & don't let the b.......s grind you down!
