I’ve just completed my online PIP appeal form and now I’m wondering whether the tribunal are given all the information from your original application such as hospital consultant letters etc. There’s an address to send any additional information so will I need to send these again and also a list of dates and outcomes of all my falls which I listed on my original application?
Also I opted to not attend but to go on the paperwork, will this go against me?
I’d be very grateful for any advice.

Yes, the DWP will provide the Tribunal Service with all of the documents used in the making of the Decision, you will receive a copy as well.
Statistically, Paper hearings that the claimant does not attend have a lower success rate than Oral ones that they do but you can't apply these statistics to an individual appeal, if you have a strong case then this will increase the likelihood of a successful appeal.

As far as I am aware they are not yet opening up hearings for face to face yet, at present they are doing telephone hearings.
Contact HMCTS and ask them if it is possible to change from a paper based hearing.
