and are you saying just fill in the appeal form with our name and address and that we are appealing the decision without saying why at this point? And can you do that?

Whilst an appeal should ideally be made within one month or your receiving the DWP's response to your MR, you can actually appeal up to 13 months after the date of the original Decision, however, you will need to explain why the appeal is late, the confusion over the unread letter may be sufficient, it would be unusual for the Tribunal not to accept your reasons.
 
If you are going to ask for a 2nd MR and the DWP may not accept your reasons, then you will need to explain why you believe that you meet the criteria for a higher award.
