which is the best way to go and how many people would I come face to face with if I chose the first option?
It's a decision that only you can make.!
Statistically the success rate for Oral hearings that the claimant attends are significantly higher than those for a Paper appeal that you do not go to, but these do not always translate to how an individuals appeal might be looked at.
Reasons for attending are that the panel have an opportunity to see you and to clarify the information you have included in your submission.
Reasons for not attending would include your having conditions that prevent you from doing so or at the very least would make it difficult for you to do so.

Unfortunately I have symptoms you cannot see, like a lot of people, only feel, epilepsy, arthritis ,hypermobility, hypersensitivity and panick attacks, that's why I wanted to know how many people I would have to face,I would prefer to go face to face as I couldn't get any real information about how it affects me out in 15 minutes which was all I had in the assessment!

You might find this video helpful. It relates to ESA appeals but the process is very similar for PIP

Just one more thing if I can please.
Will I be allowed to send in any paperwork in to support my claim like how it affects me and so on BEFORE I go to the tribunal so I have a bit less to explain and so they know a few things about me and what I can/can't do before I actually get there??

When you make a request for an appeal, the DWP will be notified and they will create a bundle of all the documents used in the making of the Decision and a submission defending it.
You will receive a copy and can then create your own submission as to why you should score more points, both submissions are sent to the Tribunal Service and are used by the panel to help them make their decision.
