It is legal to covertly record the assessment but if you are found to be doing so the assessor can stop the assessment and you will be classed as failing to participate.
The recording won't be accepted by the DWP or the Assessment Provider but might be of interest to a Tribunal panel, I emphasise the might as most panels will not have time to review the contents and will be more interested in how you meet the criteria than any issues that arose at the assessment.
