It is very unlikely that you will be able to attend in place of your wife, the whole point of an Oral hearing is for the panel to be able to question the claimant about how their conditions effect their ability to perform the activities associated with the benefit.
You can ask for domiciliary hearing where the Tribunal panel come to your home, although it is extremely rare for one to be granted.
You can ask for the hearing to be held from your home using a video conferencing application of just the phone.
You can switch to a Paper hearing.
If you still want to attend in place of your wife then you need to ask the Courts permission, you cannot turn up on the day without your wife. If allowed then I would expect the panel to view any statements you make with suspicion and it may not be to your wife's advantage for you to do this.

This is a decision that you and your wife need to make for yourselves, if her conditions are ones that would preclude her attending a similar event then it may go against her if she does attend, she would certainly need to explain how she has managed it, conversely the success rate for an Oral appeal is significantly higher than that for Paper based one.
If yo make it clear that you are attending as a witness then the Judge should allow you am opportunity to add to your wife's testimony.
