Assessors are told that the must accept and read any additional evidence that the claimant brings on the day of the interview.
It may effect the questioning that they make, but they work from a script and I would not expect them to divert significantly from this during the session, what they might do is ask additional questions.
They won't ask for more information at the assessment, there a small possibility that they might contact your GP or whoever you nominated on the form, but I would not rely on this happening.
