I am conscious I may not get all of my medical evidence back from relevant people within the appeal deadline. Can I submit this after the deadline and if so how long?
Also is it best to be brief or in depth with my grounds for appeal?
Is there a template letter I can send to medical experts to request evidence and if so where can I find it on this site please?
If you mean an appeal and not a Mandatory Reconsideration the your sending in your detailed reasons for the appeal and any evidence is usually separate from your requesting the appeal.
So you complete and send in an SSCS1 with your basic reasons for the request. once accepted the DWP will make their submission for the appeal which you will receive a copy of and then you can prepare and send your own submission to the Tribunal Service,.
There's a GP Notes PDF in the PIP section that may help with writing to your GP or Consultants although it will still need a covering letter.
