Yes but you need to explain how it varies and over what time.
Don't use "it varies" if you are always unable to complete a task just that sometimes it is more difficult than at other times.
ESA uses the majority of the time, this is different from PIP which is the majority of days.
If you are only able to complete a task only one day a week then you should score, two days will require a detailed explanation, three and you will struggle. If your conditions affect you over longer periods, for example; weeks of months then use these units, don't be tempted to switch between units as it can lead to confusion.
Make sure you explain why you can do the task when you can and why you cannot when you can't, for example; I can do the activity on Monday but would then be in severe pain for the next four days, the pain would prevent me from even attempting the task.
It can help to keep a diary, there are templates in the ESA area that you can use.
