We can't really "recommend" any !

I hadn't hear of that knee condition before :
"Chondromalacia, also known as “runner's knee,” is a condition where the cartilage on the undersurface of the patella (knee cap) deteriorates and softens. This condition is common among young, athletic individuals, but may also occur in older adults who have arthritis of the knee."

Yes, if at some time in the future your medical conditions and resulting limitations deteriorate to such an extent that you feel that you would qualify for a Higher PIP Award or a PIP Award that you were not in receipt of, you can report a Change of Circumstances (C of C) to The DWP and request a review of your current PIP status.
The thing to take into account here, is that if you did so, they would also re-look at any existing PIP Award that you had at the time.

Sorry, have no idea of specific charities that would help.
If you haven't head back from the assessment all is not lost anyway. You could have gained the criteria/ points you need to satisfy the assessor and dwp.
I think it comes down to the quality and compassion of the particular assessor you had.
Try not to worry full you find out what the outcome is.
